The knife head is made of Sandvik 12C27 stainless steel hardened to a hardness of 57-58 HRC, thanks to which the blade is highly resistant to corrosion and at the same time easy to sharpen.
It should also be emphasized that stainless steel, apart from regular sharpening, does not require special maintenance, it should only be kept clean and wiped dry after washing or using in a humid environment.
